Pieces of My Puzzle 5-18-14

Collin is graduating from High School today.

I could go on an on, and I might to that

Welcome back to another Party in Your PJs!

Melissa and I are having so much fun hosting this party each week.  As with any new project,  

we are still learning, and trying to grow this link party and get the work out that we we are here.

We want to thank each and every blogger, who has linked here with us, and who have included our

party on their blog posts or party pages.  You are helping us grow, getting the work out about us and we 

appreciate each and every one of you.  We have set a goal to host a party that included 100 links.  I know

that is a long way from the 26 links we had last week, but this goal will keep us motivated.  

We have decided, that as a thank you to our guests, that we will host a giveaway when we

Features

This week I have decided to feature some great chocolate recipes.
My son is graduating from High School this week, and I am
going to need some chocolate to get me through it.

These Mendiants from Simply Sweets by Honeybee are perfect in every way.

They look amazing, are simple to make, and as an added bonus, they have

fruit and nuts in them, so that makes them totally healthy, right?

I loving these S'mores Brownie Bowls from Gator Mommy Reviews.

Perfect for just popping in your mouth and enjoying all the sweet and 

gooey glory!

This Salted Caramel and Chocolate Chex Mix from Frosted Fingers, is a 

winner in my book.  Any treat that you can put in baggies, and pop into 

your purse or bag, eating when you need a little pick me up, is perfect

in my book!

If you have followed me for awhile, you know I love me a quick and easy treat.

These S'mores Cookies from One Tipsy Chick are perfection in my book.

Made from a cake mixed and topped with graham cracker, marshmallow and chocolate, 

what is not to love?

In my mind, Snickers are like the original energy bar.  They are perfect

at satisfying a mid day craving, filling and nutritious, right?

These Homemade Snickers Bars from It's a Keeper, look

amazing, and I am sure they might be even better then the original!

Quick and Easy Coconut Macaroons for Spring

I love coconut and coconut macaroons are one of my favorite cookies.

When I saw these Springtime Chocolate Chips in the store,

I thought they would be a perfect addition to macaroons.

These Macaroons come together quickly, and perfect treat on a day when time is short.  They store well, and can be made with ingredients most people have in their pantry.  They are soft and chewy and filled with the rich coconut taste that I love.

I decided to remove the brown chocolate chips for this recipe, allowing the pink and yellow ones to give them a Springtime feel, and I am so happy they did.  When I was making these, my plan was to drizzle them with melted chocolate chips, but once I was done baking them, I changed my mind and let them shine as they were.

Easy Coconut Macaroons with Chocolate Chips

Ingredients

• 14 oz. Sweetened shredded coconut
• 1 cup chocolate chips (I used Nestle Springtime chocolate chips)
• 1 14oz can sweetened condensed milk
• 2 tsp. vanilla

Instructions

Preheat oven to 325 degrees. Line cookie sheets with either a silpat or spray with non-stick cooking spray. In a large bowl, combine coconut and chocolate chips. Stir in sweetened condensed milk and vanilla until well combined. Scoop by heaping tablespoon onto prepared cookie sheets, flattened slightly. Bake for 15-17 minutes until the tops are golden brown. Allow macaroons to cool completely before removing from cookie sheet. I find it works best to "slide" the cookie a little, rather then list it straight up off the sheet. Store in airtight container, with waxed paper or parchment between layers.
